In Honor of the Crossfit Games 2013

Good morning from sunny California! In honor of the Crossfit games that are going on RIGHT NOW, I’ve decided to make some delicious Paleo Pancakes for a healthier (yet yummy) breakfast.  For those of you that do not have a clue of what the “paleo diet” is all about, here’s a link that may help with any questions and/or concerns

168 paleo banana pancakes

The following are the simple ingredients needed to make these delicious healthy pancakes: (serves 4)

1 banana

2 Eggs

1/2 Tablespoon of Chia Seeds

1 Tablespoon of Cinnamon

1/4cup Almonds, chopped

1tablespoon Coconut Oil

1pinch Sea Salt

  1. In a medium sized bowl, mash the banana(s) to a smooth texture. Add the eggs and whisk thoroughly until the “batter” is fully combined. Roughly chopped the almonds and add the to batter; followed by the chia seeds, cinnamon and sea salt.
  2. Heat a pan over a medium flame and grease with the coconut oil. Ladle the batter into the pan and cook for approximately 60 seconds per side; or until they are golden brown. Serve the pancakes drizzled in natural honey and garnish with fruit of your choice. ENJOY!
