Good morning from sunny California! In honor of the Crossfit games that are going on RIGHT NOW, I’ve decided to make some delicious Paleo Pancakes for a healthier (yet yummy) breakfast. For those of you that do not have a clue of what the “paleo diet” is all about, here’s a link that may help with any questions and/or concerns http://www.paleoplan.com/.
The following are the simple ingredients needed to make these delicious healthy pancakes: (serves 4)
1/2 Tablespoon of Chia Seeds
1 Tablespoon of Cinnamon
1/4cup Almonds, chopped
1tablespoon Coconut Oil
1pinch Sea Salt
- In a medium sized bowl, mash the banana(s) to a smooth texture. Add the eggs and whisk thoroughly until the “batter” is fully combined. Roughly chopped the almonds and add the to batter; followed by the chia seeds, cinnamon and sea salt.
- Heat a pan over a medium flame and grease with the coconut oil. Ladle the batter into the pan and cook for approximately 60 seconds per side; or until they are golden brown. Serve the pancakes drizzled in natural honey and garnish with fruit of your choice. ENJOY!
